I've been eating low carb for around a month now and this flour definitely has helped me keep with my carb count. It's not an alternative to normal flour, it uses far more eggs than normal flour and the taste and texture are also different but that doesn't bother me at all since its very subtle. Not only does coconut flour keep me low carb but i've learned how to hide the subtle coconut-y flavor behind layers of spices - which is a good thing not just in low carb haha. I use this mainly on making wraps ahead of time, mixing it with egg whites and some herbs and spices depending on what filling i've decided to do.3 months ago
Baking with coconut flour can be confusing for those used to wheat flour. It is highly absorbent! so you have to use alot of eggs and butter (or water) if you want it to be really smooth (for pancakes etc). A small amount of coconut flour provides a high yield of baked goods, relative to wheat flour. However, it is not good to use in making crunchy baked goods such as cookies but works incredibly well in making cake and muffin recipes. Because many do not consider coconut a nut, coconut flour is a great alternative to almond flour for those with nut allergies. As for it's nutrition, 100g of coconut flour has 9g of fat, 19g of protein, 16g of carbs, and 36g of fiber. making it good for paleo/keto diet ONLY IF Almond flour is not available.5 months ago
Since I ventured into trying different recipes for vegetables, i also tried looking for alternatives to replace regular cooking staples such as flour. Aside from being a healthier option, this flour complements vegetable dishes such as squash pancakes, cabbage dogs, cabbage cakes. It enhances the flavor and gives it another layer of texture. After a long wait because of lack of stocks, I finally got my hands on one kilogram of pure flour goodness without any harmful bleach! For a first impression, I was surprised to discover that this coconut flour smells so good. My dad was beside me when I opened it, and he wondered aloud if he can consume the flour on its own or add it on top of rice cakes hahaha. The smell was THAT appetizing. On another note, I promptly used the flour for dinner on the same day. I prepared chicken, sweet potato and celery croquettes with the frozen leftover mix I made a few days back. After cooking, I clearly tasted the difference from making fried, breaded food with commercial flour verses coconut flour. Both would have the same binding effect with the ingredients, but coconut flour enhanced the main dish by having a hint of coconut toasted smell (something that is seemingly comforting for us Asians), plus a very slight taste of sweetness that complimented the chicken.
