When juggling the demands of work and a jam-packed schedule, our eating habits too often fall by the wayside. So, for inspiration, we’re asking busy women to share what they eat on an everyday basis. Joanne Villablanca—fitness blogger, food lover, and momma of one—approaches her diet like her workouts: with discipline. Below, find her meal plan for the day, including healthy snacks and what she eats when she “cheats.”
I’m always hungry when I wake up, so breakfast is important. I eat before working out (sometimes, after, depending on the day). I usually enjoy a simple yet satisfying breakfast bowl and blend whatever fruit is in freezer that day. Today, it was banana, mango, and mixed berries, with Greek yogurt, kale, and spinach. I top it all off with chia and flax seeds, kiwi, and protein powder for an extra boost of nutrients.
If you want to lose a few pounds but love carbs, the 7Grains Organic Edamame Protein Pasta is the perfect compromise. It has an awesome texture, much like real pasta, with plenty of fiber to boot. For lunch, I paired it with the best homemade pesto sauce made by the best mom ever—ME. Delizioso!
It’s simple but delicious: chocolate protein power, banana, and a heaping tablespoon of almond butter all mixed in a blender. It’s not only nutritious, it’s oh-so-healthy, too! Kind of like my healthy version of a milkshake. Truth be told, there isn’t a day I don’t look forward to drinking it.
My dinner usually consists of grilled chicken breast, salad greens with a balsamic vinaigrette, and an egg white omelette stuffed with cherry tomatoes and spinach. (Whew!) I know, know: it sounds like a lot, almost too much. But this fills me with all the right protein without sacrificing unnecessary calories. Win-win!
That’s basically my meal plan! If anything, the amount of meals and snacks varies depending on how intense my workouts are. Regardless of how much food I consume, I eat every 3 to 4 hours in a day. But when I do get hungry before mealtime, a bag of mixed nuts or fruits always comes in handy.
